The fact that the burner unit separates from the oven box allows for you to pivot from a pizza oven to an on-the-go grill or griddle setup for multi-functional outdoor cooking. The position of the burner and the opening in the pizza box directly above the back of the oven brings that half of the pizza stone up past 800°F, while the open-air front tends to hover around 650°F. You can get to simultaneous pizzagasm with lots of practice, and I have made superb pies on a simple Weber charcoal grill and even inexpensive gas grills by fiddling with the dials and going through a lot of test pies. You slip the pie onto the bottom stone (you need to get plenty of flour or cornmeal under the dough and practice the flick of the wrist that pulls the wooden peel out from under the pie) and watch.To make sure the hot air is enough to cook the top you preheat the unit until the top and bottom stones are almost the same temp.

In our tests, fresh dough made by hand and by a local pizzeria cooked in about four minutes, coming out with a nice, puffy crust, and with just as much charring on the crust as the open-flame versions. Although this may not seem very stable, it didn’t move around during cooking, and not attaching it makes for easy removal if you’d like to use the pizza box on a grill. Once the desired temperature is reached, you're ready to bake your pizza in the BakerStone pizza box.
